Right now, I'm cooking Cranberry/Ginger compote
4 cups fresh cranberries
1 cup sugar
1.5 cups cold water
1 Tbsp finely grated fresh ginger
1 Tbsp finely chopped shallot
1/4 cup molasses
combine cranberries, sugar, water, ginger and shallot in a medium saucepan over medium heat, stirring until the sugar dissolves. Cover and cook until the berries burst (about 10 minutes). Stir in the molasses, remove from heat, and chill. Serve chilled. I
